The Moon Garou don't like to waste a kill. Every last organ and morsel of flesh is eaten or used in some capacity, in honour of the creature that surrendered its life.
In that spirit, beltfish broth is the final stop for a beltfish's innards. Eyeballs, teeth, fins, organs and even the odd parasite ("tapeworm, tapeworm, you make my belly squirm", as the garou song goes) are boiled and served in this delightful dish.
